WordPress in the current version 6.7.x is only compatible with PHP 7.2 or newer. This means that you cannot perform a direct update (neither of PHP nor of WordPress). Your developer would have to do this step by step. My recommendation would be to update PHP to 7.2 first, then update WordPress and all plugins and the theme. Then set PHP to 8.1.
The sticking point here are the plugins you use and the theme. If these have not kept up with the times, then you will probably have to do without some of them. In the worst case, you will also need a completely new theme. Your developer will certainly have to provide you with a solution here. The alternative to updating would be a completely new website.

In looking at your screenshots it looks like maybe you put the different block builder sections onto a page with the latest posts block into each section(???). If so, that’s not what I’m doing. What I’m doing is creating one post with each block builder section onto that single post with some simple texts into each section. Then I have a single page with the latest posts block on it to view the excerpt.
So, the post content is in each of the different block builder sections, not the latest posts block inside each of the block builder sections.

You have an idea on the outcome after we made an initial update – it’s a nightmare. I’m not an expert but chimming in to your questions:
Should you find regressions on your staging site, you have to make patch to fix your theme and plugins if you coded these, otherwise look for the updated version from the author.
I wouldn’t suggest to keep using older versions of WordPress Core for a long time since the security issues also evolving, thus maintaining the site properly ensures it can possibly be prevented.

Your “email and usual login name” are for your own WordPress website (which you say is inaccessible now). You can’t use these to login to WordPress.org — as these are completely different websites.
As to your website not working, I’m getting ERR_NAME_NOT_RESOLVED
which is a DNS problem, pointing to issues with your domain. A quick lookup on the Swedish Internet Foundation’s website shows your domain name editjsu.se
has expired.
Please contact your registrar to renew your domain. WordPress has nothing to do with this.
